ABSOLUTELY! The steps are slightly different depending on what vegetable it is. For Squash (butternut, acorn, spaghetti etc) scrap the seeds out on to a paper towel, removing any chunks of squash you scrap out along the way. Spread them out and allow them to dry in a cool dry place for 3-4 days. Once they have dried out put them in a jar in the fridge (or freezer). They'll last for years then!
